RED BEANS AND BROWN RICE 
1/2 c. chopped onions
2 garlic cloves, minced
2 tsp. canola oil
2 (15 1/2 oz.) cans red beans, rinsed and drained
1 (4 oz.) can chopped green chilies
1/2 c. beef broth
1/4 c. catsup
1/4 c. molasses
1 tbsp. chili powder
1 tbsp. cider vinegar
2 tsp. soy sauce
3 c. cooked brown rice

In a large saucepan, sauté onions and garlic in oil until tender. Add the beans, chilies, broth, ketchup, molasses, chili powder, vinegar and soy sauce. Let come to a boil; reduce heat to a simmer. Let cook for 20 to 30 minutes. Serve over brown rice.

Makes about 4 servings.
