CHEESE POTATOES 
6 med. to lg. new (red) potatoes
1 1/2 - 2 lbs. cheddar cheese (sharp or extra sharp)
3-4 c. sour cream
Minced dry onion or real diced onion to taste
Salt & Pepper to taste

Boil potatoes until soft (don't need to peel). Shred potatoes and cheese. Lightly grease bottom of large baking dish. Then layer until filled with potatoes, then onion, salt and pepper, sour cream, then cheddar. Bake at 350 degrees for 45 to 60 minutes.
