CHEESE POTATOES 
8-10 sm. red potatoes
1/2 stick butter
1/2 lb. Velveeta cheese
Salt & pepper to taste
Chopped onion (optional)

Cook potatoes in their jackets until soft. Peel potatoes and slice. Make a layer of potato slices in the bottom of a 1 1/2 quart casserole. Add 2 to 3 slices of butter and top with sliced Velveeta cheese. Continue layers until the cheese is left on top. Bake in 350 degree oven about 30 minutes or until cheese is melted.

Serves 4.
