STUFFED CHICKEN BREASTS 
2 whole broiler-fryer chicken breasts, halved & boned
1/4 c. bread crumbs
1/4 c. celery, chopped
1/4 c. onion, chopped (white & green parts)
4 tbsp. butter, melted
1/3 c. soy sauce
1 tbsp. pimento, chopped
1/2 tsp. lemon juice
1/2 tsp. salt
1/8 tsp. pepper

On hard surface, with meat mallet or similar flattening utensil, pound chicken 1/4 inch thickness. In bowl make stuffing by mixing together, bread crumbs, celery, onion, 2 tablespoons butter, 2 tablespoons of soy sauce, pimento, lemon juice, salt and pepper. Divide stuffing into 4 equal portions and spread a portion on each piece of chicken. Roll chicken and tuck ends. Fasten with wooden pick. Place chicken in pan. Roll in soy sauce. Bake uncovered at 425 degrees 45 minutes. Makes 4 pieces.
