SPICE CAKE 
1/3 cup shortening
1 cup sugar
1 cup sour cream
1 beaten egg
1/8 teaspoon salt
1 teaspoon vanilla
1 2/3 cups cake flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder

Preheat oven to 350°F. Grease and lightly flour 1 shallow loaf pan or 2 round layer cake pans.

In a mixing bowl, beat together shortening and sugar. Stir in the sour cream. Add the beaten egg, salt and vanilla.

Sift together flour, cinnamon, baking soda and baking powder and sift into the liquid mixture. Beat for 30 seconds, or just until no streaks remain (the less beating, the more tender the cake will be).

Bake loaf pan at 350°F or cake layers at 375°F until a wooden pick inserted in center of cake comes out clean (25-45 minutes depending upon your oven).
