“SHRIMP MAZATLAN” IS IN:
NEXT RECIPE:  SOUR CREAM ENCHILADAS

SHRIMP MAZATLAN 
2 tbsp. butter
1/2 cup shrimp (peeled and deveined)
1 tsp. minced garlic
2 1/2 tbsp. diced tomato
1 1/2 tbsp. diced zucchini
1 1/2 tbsp. diced red pepper
1 1/2 tbsp. diced green peppers
1 tbsp. chopped green onion
1 tbsp. chopped mushrooms
1 small serrano chile (whole)
1/4 cup dry white wine
salt
white pepper

Melt butter in small skillet. Add shrimp and sauté 1 minute. Add garlic, tomato, zucchini, red pepper, green pepper, green onion, mushrooms and chile. Sauté 1 to 2 minutes or until vegetables are crisp-tender. Stir in wine (be creative).

Continue to cook and stir until wine is reduced to 2 tablespoons. Season to taste with salt and white pepper. Remove and discard chile.

Serve with garlic bread (for dipping).

Makes 1 serving.

Recipe can be doubled, tripled, etc.
