INDIAN CHICKEN 
2 tbsp. butter
2 tbsp. vegetable oil
3 lb. fryer, cut up
2 med. onion, chopped
3 tbsp. flour
2 tbsp. curry powder
1 tsp. ground ginger
2 tsp. salt
1/3 c. honey
1/4 c. soy sauce
3 c. chicken broth or bouillon

Heat butter and oil in large skillet. Flour chicken and fry until browned. Remove chicken and place in large casserole. Saute onion in remaining fat until golden. Add flour, curry powder, ginger and salt to onion, mix well. Combine honey, soy sauce, and broth and add to onion mixture. Cook over high heat until sauce thickens. Pour sauce over chicken, bake at 350 degrees covered, about 1 hour. Excellent! Double recipe, freezes well. May use green pepper, and use 2 to 3 tablespoons curry. Serve with rice.
