PECAN PRALINES 
2 c. sugar
1 c. buttermilk
2 tbsp. butter
1 tsp. baking soda
Pinch of salt
2/3 c. pecans

In 8 quart pan, combine the sugar, baking soda, buttermilk, and salt. Cook over high heat, for 5 minutes, or 210 degrees, being sure to stir frequently. Add butter and pecans. Cook into a soft ball stage, stirring constantly (230 degrees or about 5 minutes). Remove from heat. Beat until thick and smooth. Drop by spoonful on waxed paper.
