EGG ZUCCHINI CASSEROLE 
4 c. sliced thin zucchini
3/4 c. chopped onion
1 med. green pepper, chopped
1 1/2 c. Bisquick
1 clove garlic
1 tsp. parsley
6 eggs, slightly beaten
1/2 c. oil
3/4 tsp. salt
3/4 c. Parmesan cheese
1 tsp. oregano
1 tsp. butter
1/2 c. Velveeta cheese on top

Bake in a greased 9 x 13 inch dish at 350 degrees for 30 minutes.
