ZUCCHINI & EGG CASSEROLE | |
2-3 med. zucchini (8" - 12" long), cut to 2 c. diced with peel on 1 med. onion, chopped, 1/4 c. 1 boiled egg, chopped 2 tbsp. butter 2 tbsp. flour 1 1/2 c. milk Salt & pepper 1 c. cheddar or Velveeta cheese, cubed Butter bread crumbs Boil zucchini about 5 minutes or until soft, set aside. Melt butter, drop in onion and cook 5 minutes. Stir in flour, take off heat and stir in milk gradually. Put back on heat (medium) and cook until thick. Add salt, pepper, cheese, eggs and zucchini. Pour into 8"x8"x2" pan. Top with crumbs and bake at 350 degrees for 30 to 45 minutes. |
