JOSEPH COOL'S APPLE PIE 
7 med.-sized apples (4 1/2 c.)
1 1/2 tsp. apple pie spice
1 c. sugar
2 tbsp. flour
2 tbsp. lemon juice
2 tbsp. butter
9 inch unbaked pie shell made from plain pie pastry
Milk

Peel, core and slice apples and place into unbroken pie shell made from plain pie pastry. Mix together sugar, spice and flour and pour over apples. Add lemon juice and butter. Brush milk around edges of shell. Roll top crust and place on top of shell.

Prick holes in top for steam to escape. Brush top with milk and sprinkle on sugar lightly. Bake at 400 degrees for 45-55 minutes or until brown.

Use only two thumbs and forefinger to mix dough to make it flaky.
