BARBECUE SHORT RIBS 
3 lb. beef short ribs, cut into serving pieces
2 tbsp. fat
1 onion, chopped
1/4 c. vinegar
2 tbsp. sugar
1 c. catsup (or 2)
1/2 c. water
3 tbsp. Worcestershire sauce
1 tsp. prepared mustard
1/2 c. celery
2 tsp. sugar

Melt fat into heavy skillet. Brown the short ribs with the onions in the hot fat. Add all remaining ingredients. Cover and cook slowly 1 1/2 to 2 hours or until tender, or bake in a moderate oven (350 degrees). Yield: 4-5 servings.

NOTE: 1 pound chuck steak can be substituted for the short ribs to make Braised Beef in barbecue sauce.
