CRANBERRY NUT BREAD | |
2 c. all-purpose flour 1 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/4 c. butter 1 egg 1 tbsp. grated orange rind 3/4 c. orange juice 1 1/2 c. golden raisins 1 1/2 c. chopped cranberries 1 c. chopped walnuts or pecans 1. Sift together flour, sugar, baking powder, baking soda and salt into large bowl. Cut in butter until mixture is crumbly. 2. Stir egg with orange rind and orange juice. Then blend mixture into flour mixture. Stir just until flour is moistened. Fold in raisins, cranberries and nuts. 3. Spoon into greased 9 1/2 x 5 1/4 inch loaf pan. 4. Bake at 350 degrees for 60-75 minutes or until tester inserted in center comes out clean. 5. Cool in pan 5 minutes. Then invert onto wire rack. Turn right side up. Cool. Store, well wrapped, for 24 hours before slicing. Makes 1 loaf. |
