HEARTY OATMEAL BREAD 
5 1/4 to 5 3/4 c. all-purpose flour
1 tbsp. salt
2 1/4 c. milk
1/4 c. butter
1/4 c. firmly packed brown sugar
2 pkgs. dry yeast
2 c. quick oats, uncooked

Stir together 2 cups flour and salt and put into large bowl of electric mixer. Heat milk, butter, yeast and brown sugar together over low heat until very warm. Add this to flour and salt. Beat 2 minutes. Hand knead 8 to 10 minutes the remaining flour and oats until stiff. Place in greased bowl and brush top with melted butter.

Cover and let rise 1 hour. Punch down dough and divide in half. Shape into 2 loaves, place in loaf pans and brush with melted butter. Let rise 1 more hour. Bake at 375 degrees for about 40 minutes or until brown. Cool before slicing.
