TOMATO-ZUCCHINI BAKE 
1/4 c. oil
6 med. thinly sliced zucchini
1/2 c. chopped onion
2 tbsp. chopped parsley
1 minced clove garlic
1 tbsp. salt
1/8 tsp. pepper
1/4 tsp. oregano
3 c. peeled, chopped tomatoes
1/2 c. grated Parmesan cheese

Pour oil in a frying pan. Cook zucchini, onion, parsley, garlic, salt, pepper and oregano, stirring constantly until zucchini is tender. Add tomatoes; cook 5 minutes until tomatoes are heated. Pour mixture into a serving bowl. Garnish with Parmesan cheese. Serves 6.
