ZUCCHINI TOMATO BAKE 
2 c. grated sharp Cheddar cheese
3 c. sm. croutons
4 c. sliced zucchini
1/2 c. chopped onion
1/2 c. chopped green pepper
3 tomatoes, peeled, diced and well drained
4 tbsp. butter, melted

Preheat oven to 350 degrees. Reserve 1/2 cup cheese and 1/2 cup croutons.

Combine remaining cheese, croutons, zucchini, onion, green peppers and tomatoes. Add melted butter and mix well. Place mixture in a buttered casserole dish and top with reserved cheese and croutons. Bake covered approximately 1 1/2 hours. Serve hot.
