OATMEAL COOKIES 
2 1/4 c. unsifted flour
1 tsp. salt
1 1/2 tsp. baking soda
4 1/2 c. old fashioned coarse oatmeal
3 c. soft brown sugar
3 sticks butter
3 eggs
3 tsp. vanilla
1 tsp. black walnut flavoring
1 c. nuts

Combine flour, salt and soda. Stir with a wire whip. Cream the brown sugar, butter and eggs. Add remaining ingredients. Mix well. Drop by teaspoon on cookie sheet. Bake at 400 degrees for 8 to 10 minutes or until browned.
