FLORENTINE SOUP 
2 pkgs. frozen spinach, thawed & drained
3 c. chicken broth
1/8 tsp. pepper
8 oz. cream cheese
1/2 c. chopped onion
3 tbsp. butter
1 1/2 tsp. salt
Dash nutmeg

Saute onion in butter. Add spinach, then chicken broth and seasonings. Blend in butter with cream cheese. Serve hot or cold.
