OVEN BAKED COTTAGE FRIES | |
4 lg. baking potatoes, about 8 oz. each, scrubbed 2 tbsp. butter 2 sm. cloves garlic, crushed 2 tbsp. freshly grated Parmesan cheese 1/2 tsp. paprika Freshly ground black pepper to taste Heat oven to 425 degrees. Pour 1/3 cup water into jelly roll pan. Cut unpeeled potatoes into 1/4 inch slices; arrange in single layer in pan. In small saucepan over low heat, stir butter with garlic to melt. Brush flavored butter over potatoes. Bake 20 minutes (for crisper fries, turn potato slices after 10 minutes; brush with additional 2 teaspoons butter). Meanwhile, in small bowl combine Parmesan cheese, paprika and pepper. Remove potatoes from oven; heat broiler. Sprinkle cheese mixture over potatoes; broil 2 to 3 minutes until light golden brown. Serve immediately. Makes 4 to 8 servings. |
