SQUASH CASSEROLE 
3 c. cooked mashed squash (5 lbs. approximately)
1 can cream of mushroom soup
1 sm. can water chestnuts
1 carton sour cream
1 sm. onion or onion flakes
1 carrot, grated
Salt & pepper to taste
1 pkg. Pepperidge Farm cornbread mix or Ritz crackers
1 stick butter

Melt butter and mix with corn bread mix or Ritz crackers and spread half of mixture in bottom of casserole dish. Mix all other ingredients and put in dish on top of mixture, then add remaining crumb mixture on top and brown in oven for about 45 minutes.
