POTATO SALAD | |
2 lbs. potatoes 1 c. sliced celery 1/2 c. chopped onion 1/3 c. sweet pickle relish 1 1/4 c. salad dressing (or mayo) 2 tsp. sugar 2 tsp. celery seed 2 tsp. vinegar 1 tsp. prepared mustard Salt to taste 2-3 hard cooked eggs, sliced 3-6 slices bacon, crumbled Cook potatoes in boiling water, covered, about 25 minutes. Drain, peel and cube. Place in large bowl. Mix together in medium bowl, rest of ingredients, except eggs. Add to potatoes and fold gently. Top with egg slices. Cover and chill. |
