OLD FASHIONED POTATO SALAD | |
4 lbs. boiling or all purpose potatoes, peeled & add salt 1 c. mayonnaise or salad dressing 1/2 c. sweet pickle relish 1/4 c. diced onion 1 tsp. whole celery seed 1 tsp. dry mustard 1/4 tsp. freshly ground pepper 6 lg. hard boiled eggs Paprika to sprinkle on top Combine potatoes with enough water to cover and 1 1/2 teaspoons salt in large sauce pot. Bring to boil partially covered. Cook until fork tender, 15 to 20 minutes. Drain and cool completely, combine mayonnaise, relish, onions, celery seed, mustard, pepper and 1 1/4 teaspoons salt in large bowl. Cube potatoes; add to bowl with eggs; toss. Cover and refrigerate until ready to serve. Sprinkle top with paprika. Makes 10 cups. |
