FRESH APPLE CAKE 
3 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 c. cooking oil
2 c. sugar
2 eggs
2 tsp. vanilla
3 c. chopped fresh apples

Preheat oven to 325 degrees. Grease and flour bundt or tube cake pan. Sift together flour, baking soda, salt, and cinnamon. In large mixer bowl, combine cooking oil and sugar; cream thoroughly. Add eggs and vanilla and continue beating until light and fluffy. Add sifted dry ingredients and apples; beat on slow speed just until thoroughly blended. Pour into tube pan and bake 1 hour and 15 minutes approximately 285 calories per serving. 16 servings.
