EGG OST (EGG CHEESE) 
Time to prepare: 2-3 hours. Cooking time: 2-3 hours.

3 qts. milk
1 qt. buttermilk
3 tbsp. vinegar
3-4 eggs, whipped

Stir together in large heavy pot. Cook at high heat until slow boil. Reduce heat to slow simmer. Cook without stirring until eggost rises to top. (Several hours). Remove eggost with slotted spoon into bowl. Sprinkle liberally with cinnamon-sugar. Refrigerate. Used by Norwegians as a topping for bread.
