LEMON CUPCAKES 
1 box lemon instant pudding
1 box yellow cake mix
3/4 c. oil
3/4 c. water
4 eggs
Glaze (recipe follows)

Mix all together. Bake at 350 degrees for 20-25 minutes. Dip cupcakes in glaze when cooled.

GLAZE:

Lemon juice
Confectioners' sugar

Mix lemon juice and sugar to taste and desired consistency.

This recipe was made in large quantities for a fundraising luncheon and was a hit! We piped a frosting of buttercream/lemon juice and sprinkled the tops with finely crushed candy lemon drops. Pretty and delicious.
