MINI LEMON CUPCAKE 
1 lemon cake mix
1 lb. box confectioners' sugar
3 lg. lemons
3 lg. oranges

Mix lemon cake batter according to directions on package.

Grease mini muffin pans. Pour about 2 tablespoons of batter in each pan. Bake according to directions on package for about 8 to 10 minutes. Mix the juice of 3 lemons and 3 oranges with confectioners' sugar.

Let cakes cool. Roll each cake in juice mixture and let dry. Great for parties and weddings. Makes approximately 12 dozen.
