SWEET POTATO PIE WITH COCONUT 
1 c. sugar
1/2 tsp. salt
1 tbsp. vanilla extract
1 1/2 c. cooked sweet potato, mashed
1/2 c. coconut
1 sm. can evaporated milk
2 eggs
1 (9 inch) unbaked crust

Combine all ingredients; pour in pie shell. Bake at 350 degrees for 50 minutes or until firm.
