SWEET POTATO PIE WITH COCONUT 
1 1/2 c. mashed cooked sweet potatoes
1/2 c. firmly packed brown sugar
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
2 eggs, well beaten
1 c. evaporated milk
1 tbsp. melted butter
1 c. flaked coconut
1 (9-inch) unbaked pastry shell

In a large bowl, mash potatoes and blend in remaining ingredients. Pour into unbaked shell.

Bake at 400°F for about 35 minutes or until knife inserted in center comes out clean. Cool. Serve with whipped cream or Cool Whip on top.
