SWEET'S CRAWFISH AND POTATO
PATTIES
 
1 c. coarsely chopped crawfish tails
1/2 stick butter
3 green onions, finely chopped
1 tbsp. finely chopped bell pepper
4 c. mashed potatoes

Saute crawfish tails (fresh or leftover from a crawfish boil) in butter with green onions and bell pepper for a few minutes. Add to mashed potatoes and make patties about the size of a biscuit. Pat a little flour on each patty. Saute or fry in a little oil or butter until lightly browned. Serves 4.
