ZUCCHINI CASSEROLE | |
2 med. or 3 sm. zucchini, sliced & unpeeled 1 sliced onion 2 tomatoes, peeled & quartered 1/2 green pepper, sliced 1 stick butter 1/2 c. Parmesan cheese 1/2 c. bread crumbs 1/2 tsp. garlic salt 3 strips, fried & crumbled bacon 1/4 tsp. maggi seasoning (optional) Salt & pepper to taste 1/4 tsp. each thyme, oregano & basil Saute zucchini, onion, green pepper and tomatoes in 1/4 stick of butter in large skillet until tender. Add salt, pepper, garlic, salt, maggi, thyme, oregano and basil. Pour into shallow baking dish. Melt other half stick of butter in skillet. Add bread crumbs and brown lightly. Sprinkle browned bread crumbs and Parmesan cheese and crumbled bacon over vegetable mixture. Serves 4. |
