ZUCCHINI - TOMATO CASSEROLE 
1 lg. onion, chunked & separated
1/2 stick butter
4 med. zucchini, cut into chunked, bite-sized
3-4 med. tomatoes, chunked
2 tsp. sugar
1 tsp. salt
1 tsp. oregano
1 tsp. basil
1/2 lb. Cheddar cheese, grated
20 Ritz crackers, crushed

In large pot or fry pan, saute onion in butter in soft, stir in zucchini, saute until soft, stir in remaining ingredients except crackers and cheese. Now, remove from stove and add 1/2 of cheese and 1/2 of crackers. Stir. Put into casserole dish. Mix cheese and crackers; sprinkle on top. Bake at 350 degrees for 15-20 minutes or until bubbly. Delicious.
