ZUCCHINI AND TOMATO CASSEROLE 
3 1/2 c. sliced zucchini
1 c. sliced onion
1 c. green peppers, sliced
1/2 tsp. Italian seasoning
1/4 tsp. garlic powder
1/2 tsp. pepper
1 can chopped tomatoes
1/2 c. cheese, shredded

Sauté onion, zucchini, green peppers and all seasonings in 3 tablespoons butter. Pour into greased baking dish. Add tomatoes; sprinkle with cheese and bake 20 to 25 minutes in 350°F oven.
