ZUCCHINI CASSEROLE WITH FRESH
TOMATOES
 
3 or 4 zucchini squash (a combination of above & yellow summer squash is very good), slice with "skin" on
1 c. or less of chopped onion
2 tbsp. canola or olive oil
Sprinkling of dill or "dippity dill seasoning", found in specialty food shops
Garlic powder, salt, pepper
1 to 2 tomatoes, cut up, depending on size

Combine all of above in a casserole to be put in the microwave. Cover. Put on "high" for about 10 minutes or until tender to your liking. Remove cover and sprinkle a lot of Parmesan cheese over this and place uncovered for 2 or 3 minutes in microwave again on medium high.

Since microwave ovens vary in power, you may need to adjust your cooking time.
