RICE SALAD | |
2 1/2 c. long grain brown rice 1 tbsp. fresh ginger, finely minced 2 carrots, grated 1 c. plain lowfat yogurt 1/4 tsp. cinnamon 1/2 c. seedless raisins Combine all ingredients in a bowl and mix well. Refrigerate overnight. Serve on lettuce leaves. |
