DOWN-SOUTH SAUSAGE PIE 
CRUST:

2 c. all-purpose flour
3/4 tsp. salt
2 tsp. baking powder
2/3 tsp. baking soda
1/4 c. butter
3/4 c. milk
1/2 c. diced onion
1/2 tsp. cayenne pepper

FILLING:

1 1/2 lb. crumbly sausage meat
1 (15 oz.) can beans with sauce
2 tbsp. chopped onion
1 (6 oz.) can tomato paste
Dash of hot pepper sauce
3 cloves garlic, minced
Salt and pepper to taste
3/4 c. grated Mozzarella cheese
Sliced tomato for garnish (optional)
Sage leaves for garnish (optional)

Preheat oven to 375 degrees. For crust, combine flour, salt and baking powder. Cut in butter. Stir in milk, onion and cayenne pepper. Turn out on lightly floured board. Knead for 1 minute. Fit into 9-inch pie plate. Prebake at 350 degrees for 15 minutes.

Saute crumbled sausage meat in skillet. Add beans, onion, tomato paste, hot pepper sauce, garlic, and salt and pepper. Spoon mixture into crust. Top with grated cheese. Bake at 375 degrees for 10 minutes or just until cheese is bubbly. Serve garnished with sliced tomatoes and sage leaves, if desired. Good served with a fresh garden salad. One 9-inch pie, 4 to 6 servings.

TIPS: You can vary this by using a sharper cheese, like a Cheddar or an American cheese.
