THERESA'S ITALIAN SPAGHETTI | |
1 jar artichoke hearts, chopped 1/4 c. unrefined olive oil 4 or 5 cloves of garlic, minced 3 or 5 scallions, finely chopped 1 tsp. fresh basil, minced 1 pkg. DeBole's Jerusalem Artichoke substitute pasta (use fettucini or linguini) or you may use fresh whole grain pasta OR 1 pkg. Brown Rice noodles OR 1 pkg. sesame noodles For the noodles: Bring large saucepan of distilled water to a medium boil. While water is being heated, make sauce: In small saucepan, on low heat, saute all the other ingredients in the Olive Oil, except the noodles. Stir and cook for about 10 minutes, being careful not to burn the garlic. When water is boiling, add the noodles and cook for 4 to 5 minutes, or according to the package directions. Drain noodles and pour sauce over the noodles, quickly distributing it. You may add a pinch of cayenne pepper and/or sea salt if your diet allows. Serve with a tossed salad, or steamed vegetables. Enjoy! |
