ITALIAN POT ROAST | |
3 lb. lean rump roast 2 tbsp. oil 2 cloves garlic, chopped 2 med. onions, chopped 1 1/2 tsp. oregano 1 tsp. thyme, whole 1/2 tsp. basil leaves 1 tsp. salt 1/4 tsp. pepper 2 (6 oz.) cans tomato paste 3 cans water 1 lb. noodles or spaghetti Grated cheese Brown meat slowly on both sides in oil, lower heat, add garlic and seasonings, simmer 5 minutes. Mix tomato paste with water, pour over meat. Simmer slowly 2 to 3 hours. Turn meat occasionally. When meat is tender, cook and drain noodles or spaghetti. Slice roast and arrange with noodles. Cover with sauce. Sprinkle with cheese. |
