PITA - GREEK SPINACH PIE 
4 c. flour
1 1/2 tsp. salt
2 soup spoons oil
1 soup spoon vinegar

Mix with warm water to form dough, about 1 cup of water, maybe more.

FILLING MIXTURE:

1 bag spinach
2 eggs
1/3 stick butter
1 1/2 c. feta cheese
Sprinkle salt

Knead dough mixture 10 minutes; let rest for 1/2 hour. Knead again 15 minutes. Slice dough 2 pieces. Place in plate. Cover, let rest 1 hour. Open dough with roller. Melt 2 soup spoons of Crisco and 1/2 stick butter. Fold dough in 1/3 putting butter and Crisco mixture on dough to separate layers.

Fold two times. Put both folded dough in refrigerator covered with plastic. Leave overnight. Open dough with roller, place in round baking pan.

Filling: Mix, spread over bottom layer of dough.

Open other dough, place on top of mixture rolling over the edge. Bake 400 degrees F. for 1 hour.
