SPICEY ORANGE CHICKEN 
1 tbsp. butter
1 tbsp. safflower oil
2 whole chicken breasts, skinned (I use breasts with ribs)
1 sm. onion, finely chopped
1 lg. garlic, pressed
1/3 c. orange juice
1/2 tsp. grated rind
1/4 tsp. ground coriander
1/4 tsp. cumin
1 1/2 tsp. sugar
1 1/2 tsp. cornstarch
1/2 c. plain yogurt

Heat butter and oil in a large frying pan - saute until lightly browned - remove and add onion, garlic, saute until softened. Stir in juice, rind, spices and sugar. Return chicken to pan, turning to coat - cover and cook until tender. Mix cornstarch and yogurt - cook until thickened. Cover and cook until done - low heat.
