CHICKEN IN MADEIRA WINE 
2 1/2 lb. fryer, cut in quarters
1/4 lb. butter
1/2 glass currant jelly
Juice or orange
Rind of orange
1/2 c. Madeira wine
Season with salt and pepper

Melt butter and currant jelly. Add juice of orange. Add above ingredients and marinate for 2 hours. Grate orange for rind and sprinkle chicken. Bake 1 1/2 hours and baste frequently.

This chicken dish is a favorite of my Mother-in-law, we had it very often when she had us over for dinner. Although it is very nice, I used to think she didn't know any other chicken recipes.

This was very tasty, however the recipe is vague. What is 1/2 glass of current jelly? I guessed and used 1/2 cup. At what temperature should the chicken be baked? I baked it at 350 degrees for 1 1/2 hrs.
