FRESH APPLE CAKE 
2 eggs, beaten slightly
2 c. sugar
1/2 c. vegetable oil
1 tsp. vanilla
2 c. self rising flour (if plain flour is used, add 1/2 tsp. salt and 3/4 tsp. baking soda
1 tsp. cinnamon
4 c. diced apples (any kind will do; I like fall apples best)
1 c. chopped pecans

Beat eggs, then add sugar, oil, and vanilla. Stir, then add flour and cinnamon. Add apples and pecans. The batter will be real thick. Just take a large wooden spoon and stir by lifting and turning. Spoon into a 9 x 13 inch or little larger, glass or metal pan; or use a tube pan. Bake 30-40 minutes at 350 degrees.

NOTE: Leave uncovered; it will be pretty and crunchy. When covered later, it will get very moist and good.
