TUNA BURGERS 
11 oz. drained canned tuna, flaked
2/3 c. skim milk
12 saltines, made into crumbs
1/2 c. chopped onion
1/2 c. chopped green bell peppers
1 egg, beaten
2 tbsp. vegetable oil
2 c. canned crushed tomatoes
1 tsp. chili powder
2 oz. Monterey Jack cheese, shredded

Combine tuna, milk, cracker crumbs, onion, peppers and egg. Mix well and form into 8 equal burgers.

In skillet, heat oil over medium heat; add burgers and cook until lightly browned, 2 to 4 minutes on each side. In small bowl combine tomatoes and chili powder and pour over burgers. Cover pan and simmer about 5 minutes. Sprinkle with cheese, cover and heat until melted or broil until melted. Makes 4 servings.
