CHEESE PIE 
16 oz. low fat cottage cheese
3 eggs
Sugar substitute equivalent to 2/3 c. sugar
1/8 tsp. almond extract

TOPPING:

1 pt. light sour cream
Sugar substitute equivalent to 3 tbsp. sugar
1 tsp. vanilla

Beat cheese and add eggs, one at a time. Add sugar substitute and extract; beat for 5 minutes. Pour into a greased 9 inch pie pan. Bake at 325 degrees for 50 minutes. Cool 20 minutes. Mix the topping ingredients together and spoon over top of the pie. Bake 15 minutes. Cool and refrigerate until ready to serve.
