BEEF PORCUPINES 
1 lb. lean ground beef
1/2 c. raw rice
1/4 c. onion, chopped
1 tsp. salt
1/4 tsp. pepper
2 tbsp. vegetable oil
2 (8 oz.) cans tomato sauce, seasoned with garlic powder, basil, & oregano
1 c. water

Mix beef, rice, onion, salt and pepper. Form into small balls. Fry in hot vegetable oil, turning frequently, until light brown but not crusty on all sides. Add seasoned tomato sauce and water. Mix well. Cover and simmer about 45 minutes. Makes 4 servings.
