PANEER TIKKA PIZZA
1 block paneer
1 red bell pepper
1/2 red onion
3 Thai green chilies
1/2" ginger
1 tbsp. ghee (clarified butter)
1/4 cup lemon juice
1 cup yogurt
red food coloring (optional)
Pillsbury frozen pizza crust
1 bottle marinara sauce
Shredded Mozzarella cheese

Marinade: Blend the chilies, ginger, ghee, lemon juice and red food coloring together until they are pureed. Add the blended mixture to 1 cup of yogurt and whisk until it is smooth and creamy

Chop the paneer, bell pepper and onion into bite sized chunks and place in a Ziploc bag.

Pour the marinade in, squeeze out the air from the bag and seal. Set in the refrigerator for a couple of hours.

Pizza: You can make your own crust or use a store bought frozen crust. I used the Pillsbury frozen pizza crust.

Spread 1/4 cup marinara sauce on the crust Spread a thin layer of mozzarella cheese on top Spoon the paneer, peppers, onion and marinade mixture on top Add 1/4 cup more marinara sauce on top Top with mozzarella cheese Bake at 475 for 15 minutes

If you use the Pillsbury crust, follow directions to pre-bake the crust before adding toppings. This will prevent the crust from getting soggy.
