GRANDMA SADIE'S LEMON PIE 
1 baked pie shell
2 c. water
2 or 3 lemons (juice)
3 egg yolks
Grated rind of 1 lemon
1/4 c. and 1 tsp. corn starch
1 c. sugar
Pinch of salt

MERINGUE:

3 egg whites (room temperature)
6 tbsp. sugar
1/4 tsp. salt

Add 1/2 of water to corn starch and sugar. Stir. Add slightly beaten egg yolks and all of the water. Cook in a fry pan on medium high heat. When thick, add rind and lemon juice. Cook about 3 more minutes to make sure the corn starch is done. Pour into baked shell.

Add salt to egg whites. Slowly adding sugar, beat to meringue consistency. Pour meringue on top of pie and bake at 325 degrees until brown.
