CORN CASSEROLE 
1 sm. onion, diced
1/2 green pepper
1/4 lb. butter (1 stick)
3 eggs, well beaten
1 can whole kernel corn
1 can cream style corn
1 (8 1/2 oz.) box Jiffy corn muffin mix
1 c. grated cheese

Saute onion and pepper in 1 stick of butter. Combine with both cans of corn, eggs and muffin mix. Pour into a large greased casserole and top with grated cheese.

Bake at 350 degrees for 40-45 minutes.
