CHIPOTLE COPYCAT LIME RICE | |
1 tsp. oil or butter 2/3 c. basmati rice 2 tsp. fresh cilantro 1 c. water 1/2 tsp. salt juice of 1 lime In 2 qt. heavy saucepan, heat oil over low heat, stirring occasionally till melted. Add rice and lime juice, stirring well, about 1 minute. Add water and salt, bring to full boil (can increase water amount). At boiling, cover and turn down to a simmer over low heat till rice is tender and water is absorbed, about 25 minutes. Add cilantro and fluff with a fork.
