DO - AHEAD MASHED POTATOES 
10 potatoes, peeled and cut
8 oz. cream cheese
8 oz. sour cream
1/2 c. butter
1/4 c. chopped green onions or chives
Salt to taste

Boil potatoes until tender. Mash. Beat cream cheese until smooth. Add potatoes and remaining ingredients. Butter a 2 quart casserole. Spread mixture evenly in casserole. Sprinkle with paprika. Cover and refrigerate. Remove from refrigerator 15 minutes before baking. Bake, uncovered, at 350 degrees for 30 minutes.
