PINTO BEAN SALAD 
1/4 c. salad oil
2 tbsp. fresh lime juice (1 lg. lime)
1 tbsp. ground cumin
1 tsp. garlic, minced
2 cans (15 1/2 oz. each) pinto beans, drained and rinsed
1/4 c. chopped red onion
1/4 tsp. pepper
1/2 tsp. salt
For garnish: halved lime slices

In a large bowl whisk oil, lime juice, cumin, garlic, salt and pepper with fork. Add beans and onions; toss to coat. Cover and chill.

Note: This is good with burgers in the summer.

I often try recipes that seem unusual with the ingredient combination and often find something great... and have to say this is the "first" time I have provided this type review... but this recipe is GROSS! I have added everything possible - trying to save it. Home made chow chow - sweet pepper, pickle juice - everything/anything... but it is disgusting!
